From Our Family's Coffee Roots in Guatemala to Your Cup in Texas
Long before Green Ape Coffee Roasters began roasting beans in Lago Vista, Texas, coffee was already part of our family's history in Guatemala. Our connection to coffee growing reaches back seven generations, to the agricultural traditions of the 1800s. Today, our work in Texas is one way we carry that story forward.

A story rooted in Guatemala
Coffee begins well before a bag reaches your kitchen. On the farm, it takes time to tend coffee trees, watch cherries develop, harvest ripe fruit, and carefully process the seeds inside. Every decision matters. These are more than steps in a supply chain to our family; they are part of a heritage passed down across generations.

My mom and her cousin among the coffee plants — a personal connection to the Guatemalan coffee-growing heritage behind Green Ape.
The photographs here show the growing and processing side of coffee — something most people never get to see when they pick up a finished bag. Ripe cherries don't look anything like the brown beans in your grinder. First they must be harvested, processed, dried, prepared, and eventually roasted.

Why Antigua coffee matters to us
The highlands around Antigua, Guatemala, are known for coffee with a distinctive balance of sweetness, body, and lively acidity. Depending on the farm, processing, and roast, a cup might suggest chocolate, caramel, spice, or bright fruit. Growing conditions matter, but they don't guarantee an exceptional result by themselves: careful farming, handling, and roasting are just as important.
We value this connection to origin because we know that a memorable cup begins with the work done before coffee ever reaches our roastery.
From farm heritage to roasting in Lago Vista
Today, Green Ape Coffee Roasters is a family-owned business based in Lago Vista, Texas. We don't simply put our name on finished coffee. We roast and package our coffee ourselves, paying attention to how each batch develops and how the beans are handled before they reach customers.

Roasting is a hands-on craft. Heat, timing, and development affect sweetness, body, aroma, and how a coffee tastes in your cup. We make choices along the way to create coffees that are enjoyable for different brewing styles and preferences — from approachable everyday roasts to bolder espresso.

Keeping the connection personal
We have the privilege of sharing our coffee with people in Lago Vista, Georgetown, and beyond. Whether someone finds us at Wolf Ranch Farmers Market, on a local grocery shelf, or through our online store, we want them to know there's a real family and a real roasting operation behind the bag.

Seven generations of coffee heritage isn't just a line on our packaging. It's the reason this business means so much to us. We are proud of our roots in Guatemala and proud to continue the work here in Texas, one roast at a time.
